Yummy Hearty Veggie Soup

Carrots, raw, 3 medium choppedPotato 2.5 cup diced Broccoli fresh 1 cup, choppedOnions1 large, choppedMushrooms fresh, 3 cup, pieces or slices 2 tbs olive oilVegetable Broth 10 cup Diced Tomatoes in Tomato Juice 2 cup Celery raw, 3 stalk, medium, choppedGreen Peppers (bell peppers), .75 cup, choppedYellow Peppers (bell peppers), .5 cup, chopped1 cup white navy beans (canned or presoaked)Soy Sauce, 2 tbsp Basil, dried, 1 tbsp Oregano, dried, 1tbs.Parsley, dried, 1 tbsp
Heat oil in pan over medium high heat. Add onion and cook for 5 minutes. Add mushrooms and cook for an additional 10 minutes, stirring often.
Chop all veggies and add once onions are "translucent" -approx 15 minutes into cooking. Add stock and all veggies. Simmer until carrots and potatoes are done (the smaller you dice, the quicker the cooking time). When almost done, add oregano, basil, soy sauce and parsley. Can add mrs. dash (garlic and herb) if you would like too. Serve and enjoy!
