Wade's Mexican Lasagna

Ingredients

1lb. Extra lean ground turkey1 C. Chopped onion1/2 C. Chopped Green Pepper4 tsp. olive oil1 package of reduced sodium taco seasoning1 16oz. can of rinsed black beans2 16oz. cans fat free refried beans1 C. frozen corn kernals3/4 C.(2% milk 4 cheese mexican blend)16 table spoons of fresh cut salsa (mild)4 (7 inch) Tortilla (low carb)
Add 2 tsp.olive oil to 12 inch frying pan
On med. heat add turkey and brown till done.
Add onion, corn and green pepper to turkey saute till vegtables are cooked
Add taco seasoning,1/2 C. water, mix well cook for 5 mins.
Add (drained and rinsed) black beans mix well
Add Fat free refried both cans stir tii everything is mixed in well.
Reduce heat to low and let simmer for 3 to 4 mins.
Set oven to bake 350 degrees.
Using a 9x13 baking pan take the other 2 tsp. of olive oil and spread it over the bottom and sides of the baking pan.
Lay 2 Tortilla's on the bottom of the pan.
Spread an even layer of the beans across (about 1 inch thick) the bottom.
Sprinkle part of the cheese on top of the beans.
Now add 8 tablespoons of fresh cut salsa on top of the cheese.
Repeat the procedure again.(Tortilla, beans, cheese and salsa.
Place in the oven uncovered 15 mins. to 20 mins. Till cheese is melted.
Serving Size: Makes 9 1.5 cup servings
