4 medium bananas1/2 c. Splenda (original recipe calls for 1/2 - 1 c. sugar)1 slightly beaten egg1/3 cup melted margarine or butter1 tsp. baking soda1 tsp. baking powder1/2 tsp. salt1 1/2 cups flour (I used a combination of white & wheat)
Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients together, being careful not to over-stir! Pour into greased muffin tins or paper cups and bake at 350 degrees for approximately 20 minutes.
