Salmon Patties

Ingredients
1 can red (or pink)salmon, cleaned of skin and bones and separated.1 raw egg4 to 8 wheat crackers, depending on what you have on hand, crushed finely1 stalk celery, minced1 scallion, mincedsalt, pepper and garlic powder to taste1 Tablespoon olive oil1 Tablespoon Earth Balance Buttery Spread
Directions
Mix first 5 ingredients. Add salt, pepper and garlic powder to taste. Form 4 equal patties.
Heat/melt butter and olive oil together in a skillet at medium heat. Place patties in heated pan, brown on both sides and heat through.

Serving Size: Makes 4 patty's, approx 3.2 ozs each
