Crock pot chili, simple, easy and satisfying! Chicken, corn, kidney beans, stewed tomatoes and spices! Throw it all in the pot and walk away!
Par boil your chicken and chop into bit size bits. In a skillet put a little extra virgin olive oil and get your pan hot. Toss in your chicken and seasonings (you can add the two seasonings I've listed along with a packet of seasoning mix) and let cook with one cup of water. Keep lightly boiling and let cook until all liquid is gone. Meanwhile, to your crock pot add 1 can corn, 1 can dark red kidney beans, 1 can stewed tomatoes and 5 slices of jalapeno pepper (if you want heat). Once chicken is done, add to crock pot mixture, set on low and allow to cook for 4-6 hours.
