Tzatziki

Ingredients
1 cup good quality Greek yogurt1/2 cucumber, grated1 TBSP fresh dillJuice of 1/2 lemon1 TBSP olive oil1/2 clove garlic, minced
Directions
Place the grated cucumber in a colander and sprinkle with 1 TBSP salt. Let sit to drain for at least 2 hours

Add cucumber to yogurt with remaining ingredients.

Let sit refrigerated for at least a few hours so flavors will develop.
