1 large sweet potato (6-7 inches) peeled and cubeddrizzle of olive oil (about 1 tsp)drizzle of honey (I use about1 TBsp)sprinkle of basil (I use about 1 tsp)drizzle of balsamic vinegar (I use about1 TBsp)
Preheat oven to 400 degrees.
Drizzle the balsamic on the bottom of a baking dish and swirl around. Put the chopped sweet potato in the baking dish. Drizzle with olive oil and honey. Sprinkle with basil and toss. Cover with foil and bake for 30 minutes, or until potatoes are tender.
