Mashed Sweet Potatoes & Plantains

Ingredients
1 Plantain1 Sweet Potato3/4 Cup Skim Milk1 Tbsp Unsalted Butter1.5 Tbsp Packed Brown Sugar1 Dash Salt
Directions
Peel and cut sweet potato into 1 inch chunks
Boil for 10-20 minutes until soft
Peel and cut plantain into 1 inch sections
Cook on stove top until golden brown in color
Combine boiled sweet potato and cooked plantain in mixing bowl
Add in all other dry ingredients
Mix well, adding milk slowly while mixing

Serving Size: Makes 4 Servings

    Predictably wonderful taste! But the measurements were hard to figure out. I went with nut stats and had very soupy dish -- had to add a good bit more sweet pot and plantain. - 1/2/19
