1 tbsp butter1 green bell pepper, chopped8 oz precooked ham, diced4 eggs, beaten1/2 tsp (a couple pinches) onion powder3 oz Cheddar cheese, shreddedSalt and pepper to taste
Melt the butter in a skillet over medium heat.
Add the diced bell pepper and saute for a couple of minutes, until the pepper turns a bright green color and is slightly soft.
Add the ham to the green pepper and cook for another 2-3 minutes, until the ham is warmed all the way through.
Pour the eggs over the ham and diced pepper and scramble, mixing thoroughly. Sprinkle onion powder, salt, and pepper over everything.
Remove skillet from heat, top with cheese and cover. Serve once cheese is melted.
