Fresh Shrimp Salad

Ingredients
11/2 pound medium shrimp, peeled, deveined, cooked and tails removed 2 stalks celery, finely chopped2 green onions, finely chopped 1/2 cup Italian parsley, finely chopped3 tablespoons fresh lemon juice 3 tablespoons olive oil1/4 teaspoon sea salt 1/2 teaspoon freshly ground pepper
Directions
Combine shrimp and remaining ingredients in a large bowl, mixing well. Chill at least 30 minutes. Serve over mixed greens, arugula, crackers, or on hoagie rolls with lettuce and tomato.
