French potato-carrot-onion soup

Ingredients
1 lb carrots sliced1/2 lb onions sliced1 lb potatoes cubed1/2 TBS saltfresh thyme optionalwater1/4 C half and half
Directions
combine all ingredients but 1/2 and 1/2 and bring to simmer, cover and cook 40 min or until tender. Puree with immersion blender. stir in 1/2 and 1/2.
