1 cup of earth balance butter (2 sticks)1 cup stevia in raw1/2 cup splenda brown sugar blend2 eggs2.5 teaspoons vanilla extract1.5 cups white wheat flour1 tbspoon vital wheat gluten1/2 cup self rising flour2/3 cup cocoa powder1/2 tsp baking soda1/4 tsp kosher salt1.5 - 2 cups white chocolate chips
1. Preheat oven to 350
2. Spray or wipe 2 whoopie pie pans with olive oil
3. Beat softened butter with sugars.
4. Add vanilla, and eggs, beat it.
5. Separately whisk dry ingredients: flours, vital wheat gluten, cocoa powder, baking soda, salt.
6. Combine wet and dry ingredients. Beat.
7. Stir in white chips.
8. Put heaping tablespoonfuls into whoopie pie pans
9. Bake about 9 minutes.
10. Best served warm. The fake sugar after-taste is almost non-existent then.
