Baked Lemon Chicken w Mushroom Sauce

Ingredients
* Chicken Breast, no skin, 3 breast, bone and skin removed * Olive Oil, 1 tbsp * Lemons, 1 fruit without seeds * Butter, salted, 3 tbsp * Mushrooms, fresh, 3 cup, pieces or slices * Chicken Broth, 0.5 cup * Parsley, 1 tbsp * *Wheat flour, white, all-purpose, 1 Tbsp
Directions
Preheat the oven to 400 degrees F.
Place the olive oil in an 8X8 glass baking dish. Place the chicken breasts (halves) in the dish, coating both sides with oil. Squeeze the juice of half a lemon over all. Slice the rest of the lemon and place a lemon slice on top of each chicken piece. Bake in preheated oven for 30 - 40 minutes until brown.

In a large skillet, melt the butter. Add the sliced mushrooms. Saute until the mushrooms are brown and have excluded their juice. Sprinkle with flour and blend. Add the chicken broth, stirring to make a medium thick sauce. Allow to reduce, adjusting with a little more broth to make a creamy sauce. Add fresh parsley at the last minute. Spoon the sauce over the Lemon baked chicken breasts. Delicious!
