Minestrone with Kale

Ingredients
2 tsp olive oil2 medium raw zucchini, sliced and diced1 medium onion, chopped10 raw baby carrots, chopped2 cups raw kale, chopped28 oz can diced tomatoes, with basil, garlic and oregano4 cups vegetable broth15 oz can great northern beans, drained and rinsed1 cup cooked qunoa or orzo1/4 tsp salt1/4 tsp pepperserve with parmesan cheese on top
Directions
heat oil in large pot, add carrots, zucchini, onion, saute on high heat until onion is transparent -approx 7 mins
add kale, saute until wilted- 3 to 5 mins,
add tomatoes, broth and beans simmer about 20 minutes or until carrots are tender- stir in qunoa, salt and pepper
