Coconut, Flax and Rice Pancakes

Ingredients
1 cup brown rice flour1/3 cup coconut flour2 tbsp flaxseed meal1 tbsp olive oil1 tbsp baking powderOptional:1 tbsp sugar/sweetener (the nutritional info does not account for sugar)
Directions
Mix flaxseed meal with 6 tbsp of water and let it sit for two minutes. Mix the remaining ingredients in another bowl and them combine them with the flax. Mix until smooth. Grease a frying pan and drop three spoonfuls of the mixture onto it. Wait til it won't break apart and then flip it. After a few minutes it should be cooked through. If you know how to cook regular pancakes, cook them like that. :D
