Healthier Mac n Cheese

Ingredients
100% whole wheat pasta, rotini 13.25 oz box1 1/2 cup of cauliflower/ carrot purée4oz 2% velveeta
Directions
Boil and purée a mixture of cauliflower and carrots. I will do a batch of this and freeze in bags, with 1 1/2 C serving per bag. Boil pasta as directed. As pasta is boiling mix and melt the 1 1/2 c of vegetable purée with 4 oz of velveeta. Drain your pasta, mix in the veggie and cheese purée and lightly salt to taste. I use natural sea salt. With a 13.25 oz box of pasta, I usually have about 1 c of pasta not used so that the sauce is not spread too thin. My kids love this Mac n cheese!
