Shrimp Fried Rice

2 cups instant brown rice, cookedCelery, raw, 1 cup, dicedPeppers, sweet, red, fresh, .5 cup, slicedGreen Peppers (bell peppers), 0.5 cup, choppedOnions, raw, .75 cup, choppedMushrooms, fresh, 1 cup, pieces or slicesGinger, ground, .5 tspGarlic, 1 tspSoy Sauce, 1 tbspOlive Oil, 1 tbspShrimp, raw, 8 ozEgg, fresh, 1 large
In a small bowl beat egg, set aside.
Heat oil in a lg skillet on med. high, add rice, veggies, ginger & shrimp. Cook until veggies are tender.
Clear out the center of pan by pushing rice mixture to the sides.
Pour egg into space. Scramble until almost firm. (about 1 min)
Mix rice mixture together with egg. Cook 1 min.
Add soy sauce, stir.
Serve immediately.
