Apple Cinnamon Muffins

Ingredients
2 C. shredded Apples1/2 C. dried Cranberries1/2 C Walnut pieces1/2 C Canola Oi1/4 C. Applesauce, unsweetened1/4 C Milk, 1%*1/2 C Splenda)2 tsp. Vanilla Extract, 2 tsp1 tsp. Baking Powder2 lg. Eggs1 tsp. Cinnamon1 C. Whole Wheat Flour1 C. white flour)1/2 tsp. Salt1/2 C. grated raw Carrots1/2 C. shredded coconut, toasted
Directions
Preheat oven to 350 degrees. Spray muffin tins with snonstick spray or line with muffin papers. Combine flours, splenda, baking powder and salt in a large bowl. Add apples, carrots, cranberries, and nuts. Mix well. Add oil, applesauce, milk, vanilla, and eggs. Stir till just moist. Fill muffin cups 1/2 full. Bake 20-25 minuts, till tops spring back. Reove from tins and let cool.
