Chicken and Pasina (stars) soup

Directions
1/2 box of pastina 4 chicken thighs , deboned and sknned2 cups cherry tomotoes1 lg onion chopped 6 oz baby spinach4 TBsp olive oil 2 quarts chicken stock
1. in a deep soup pot cook chicken in the chicken stock, set aside and cool down. Cut the chicken in bite size pieces.
2. in the same pot , cook onions in the olive oil until they are translucent.
3. add back the stock and bring to a boil.
4. stir in the spinach, tomatoes, and pasta.
5. Stir in the chicken , season with salt and pepper to taste.
6. Let rest for 20 minutes before serving ,
7. top with olive oil and Romano cheese if desired.
Serving Size: makes 8 servings
