Baja-Style Chicken Bowl

Brown Rice, medium grain, 6 cup Skinless chicken breast, 16 oz (Cooked & Diced) *Peppers, sweet, red, fresh, 1 medium Green Peppers (bell peppers), 1 cup Yellow Sweet Corn, Canned or frozen, 1.5 can Beans, black, 1.5 cup Olive Oil, .75 tbsp Salsa, 1 cup *Colby and Monterey Jack Cheese shredded, .75 cup
Prepare Brown rice
Heat olive oil in skillet over medium heat.
Saute bell pepper, corn, bean, and diced cooked chicken for 5-10 mins.
Season with Salt and Pepper to taste.
Spoon mixture on top of .75 cup of rice and top with 2-3 tbsp of cheese and .75 cup of Salsa
