Moms Pudding-Oatmeal Cookies

1 cup butter,softened3/4 cup firmly packed light brown sugar1/4 cup sugar2 large eggs 1 (3.4oz) package vanilla instant pudding mix1and 1/4cup all-purpose flour1 teaspoon baking soda3 and 1/2 cups uncooked quick-cooking oats1 cup shredded coconut1cup chopped pecans1 cup dried cranberries
Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add eggs, 1 at a time, beating until blended after each addition. Add pudding mix; beat until blended.
Combine flour and soda; gradually add to butter mixture, beating at low speed until blended. Stir in oats, coconut, cranberries and pecans. Drop by teaspoonfuls onto ungreased baking sheets.
Bake at 350 degrees for 10-12 minutes. Remove to wire racks to cool. Yields 5 dozen
