Easy-Peasy Coq au Vin

Ingredients
1C MUSHROOMS, sliced2 med CARROTS, sliced in coins1 med ONION, coarsely diced4oz RED WINE4oz CHICKEN STOCK2T VINEGAR (basalmic is tastiest)1t Herbes de Provence/poultry seasoning3 GARLIC cloves, smashed and diced
Directions
Brown chicken & remove from pan.
Combine sauce ingredients.
Heat on medium, when simmering ADD CHICKEN.
Cover, reduce heat and simmer for 20-30 minutes or until chicken is done.

Serve over wide egg noodles.
