Spinach Lorraine Crustless Quiche

Egg, fresh, 6 large (remove)Spinach, frozen, 6 cup (remove)Onions, raw, 2.5 cup, chopped (remove)Bacon, 8 medium slices, cooked (raw product (remove)Fat free half and half, 3 cup (remove)Gruyere Cheese, 6 oz (remove)Swiss Cheese, 6 oz (remove)Mozzarella Cheese, part skim milk, 2 oz (remove)saltnutmeg, 1/8 tspcayenne, 1/8 tsp
coat extra large glass rectangular dish with non-stick spray. Mix eggs, cream, nutmeg and cayenne with whisk.
Saute bacon, remove grease, saute onions. Defrost spinach and put in dishtowel. Squeeze all water out.
Sprinkle 1/2 c. cheese on bottom of dish. Spread onions, spinach over bottom. Sprinkle bacon. Pour Mixture over. Top with Cheese
Bake for 45-60 minutes until knife comes out clean.
Cool a bit before serving to set
