2 Tblsp EVOO1 cup chopped celery3 cups diced onion2-8 oz pkgs sliced mushrooms1 1/2 cups diced sweet peppers5 cups diced roma tomatoes2 tsp garlic powder2 tsp dried oregano1 tsp dried thyme4 tsp dried basil2 tsp salt1 tsp pepper1 tsp crushed red pepper flakes1 1/2 Tblsp tomatoe paste5 cups water
Heat oil in pot. Add all ingredients except for paste and water. Saute over medium heat til vegies are very tender. Add paste and cook for an additional 2-3 minutes over medium heat stirring constantly. Add 2 cups of water and then use a hand blender to blend ingredients. After blended add remaining water and simmer over low heat for an additional 30 minutes to an hour.
