Chocolate-coffe mini cupcakes

Ingredients
1 Box Betty crocker supermoist triple chocolate cake mix1/4 cup cocoa powder3 eggs1 1/3 cups water1 hefty tablespoon instant coffee 1/4 cup oil3/4 cup ground flax seed
Directions
-preheat oven 350°
-sift cake mix and cocoa, place in mixing bowl
-dilute coffee in water then add to cake mix. stir.
-add eggs, oil and flax seed and mix well.

-Pour batter into mini baking cups about 3/4 full.
-Bake for 15 minutes or until toothpic inserted in the middle of cupcake comes out clean.

Makes about 30 servings (60 minis) 2 per serving.
