Key West Crab Cakes

Blue Crab, 16 oz Peppers, sweet, red, fresh, 2 tbsp Parsley, 1 tbsp Onions, raw, 1 tbsp chopped Mayonnaise, regular (mayo), 1 tbsp Egg, fresh, 2 large Baking Powder, 3 tspSoy Flour, 2 tbsp Old Bay Seasoning, 1.5 tsp
Pick over crab. Mix all ingredients together. Drop by tablespoonfull into hot oil and fry. Batter will be loose, but eggs will ultimately bind the cakes together so be sure not to move them in the first two minutes. Check after two minutes and flip to brown the other side.
Serve with remoulade sauce. Makes 18 small poker chip sized crabcakes or 10 larger crabcakes.
