Quiche -Spinach, Mushroom, Tomato, feta

2 large eggs1/2 c egg whites (aprox 3 large eggs)5 oz evaporated milk2 tbsp dijon mustard1/2 tsp salt1/4 tsp pepper 1.5 tsp olive oil12 grape tomatoes (sliced in half)spinach 10 oz packagemushrooms 10 oz package 4 oz feta crumbled
Saute mushrooms in 1 tsp of olive oil and set aside. Saute spinach and tomatoes in 1 tsp of olive oil.
Whisk together egs, milk mustard, salt and pepper.
Add cheese, cooked mushrooms, spinach and tomatoes to pie plate. Top with egg mixture. Bake at 400 degrees for 25 minutes.
