veg chicken tortellini

2 pounds boneless skinless chicken( i use a costco roasted)1 double pack olivierri 7 cheese tortellini or 14 servings6 cups diced butternut squash5 cups diced or chopped mushrooms3 cups chopped asparagus2 jars classico light alfredo
pre heat oven to 350, i Place all veggies on half sheet pan and roast. I do not add oil or salt pepper. The water from the mushrooms will help them cook. Cook for 45 min, while that is going on I (actually my hubby is skinning and deboning the chicken). Cook the past according to package directions I do salt the water, rinse. You can mix every thing together and serve family style but what i do is put out my 14 containers rubbermaid or the like. I put in the pasta 3/4 cup. add 1/2 cup veg and add a little more to each if you have extra, then I put about 2 ounces of chicken on each container and pour 1/4 cup of light alfredo on top. I cover and freeze them for lunches.
Serving Size: 14 servings 3/4 c pasta with 1/2-3/4 c veg approx 2 onces chicken and 1/4 c light alfredo
