CJ Quiche, Spinach & Mushroom

Ingredients
Egg, fresh, 3 large (remove) egg white, fresh, 3 large (remove) Spinach, fresh, 3 cup (remove) Onions, raw, .25 cup, chopped (remove) Mushrooms, fresh, 2 large (remove) Cheddar Cheese, .33 cup, shredded (remove) *Potatoes, hashed brown, frozen, plain, unprepared, 1 cup (remove) Pie crust, frozen, ready-to-bake, 1 crust, single 9" (remove) Olive Oil, 1 1tsp (remove) Butter, salted, 1 pat (1" sq, 1/3" high) (remove)
Directions
Saute onion, mushrooms and spinach in olive oil & butter. Whisk eggs and egg whites in large bowl. Mix in potatoes, cheese, and cooked veggies. Pour into pie crust. Bake at 350 for 25 - 30 minutes.
