Hot Brown Rice, Nuts & Flax

Ingredients
1/2 C. long-grain brown rice1 C. Plain soy milk1/4 tsp. ground nutmeg8 Brazil nuts - shelled and chopped2 Tbsp. ground flax seed
Directions
Place brown rice, soy milk and nutmeg in a saucepan. Bring to a boil, stirring frequently. Cover pan and reduce heat to low. Simmer for approximately 45 munites. Top with chopped Brazil nuts and ground flax seed. Makes two 3/4 cup servings.
