Vegetable Quinoa

Ingredients
1 Cup Quinoa 2 Cups Chicken Broth 10-15 mushrooms, chopped into large pieces2 medium zuchinni squash, chopped into chunks2 tablespoons olive oil 1 cup chopped green onion 4 teaspoons minced garlicCilantro for garnishment 10 fresh basil leaves1 Tablespoon oregano1 tablespoon seasoning salt
Directions
1.Sautee mushrooms, zuchinni, and green onion in olive oil over medium-high heat in a large pan.
2. Add dry quinoa as well as basil, oregano, and seasoning salt. Sautee quinoa until it becomes a pearly opaque color.
3. Add chicken stock and bring to a boil.
4. Reduce heat to a simmer and cover pan. Allow to simmer for about 20 minutes, or until quinoa is fluffy and a majority of the liquid is gone.
5. Garnish with chopped cilantro and serve hot.

Serving Size: Makes 4 generous side portions
