Vegan Pasta Casserole

8 oz pasta (i used regular penne)1 onion chopped1 green bell pepper chopped8 oz mushrooms chopped3-4 cloves garlic chopped3/4 c spicy red wine (merlot)salt8 oz tomato sauce14.5 oz diced tomatoesoreganobasilmarjoramcrushed red pepper flakestobasco4 oz mozzarella style shredded Daiya cheese
pre-heat oven to 400 degrees
cook pasta
saute onions, pepper, mushrooms, garlic until soft
add salt to taste
deglaze pan with wine
add seasonings/spices to taste
add tomato sauce and diced tomatoes
drain pasta and put in glass casserole dish
top with sauce
sprinkle with "cheese"
bake for 25-30minutes
Serving Size: cut into 8 "pieces" to make 8 servings
