Mock Noodles.1 large eggplant peeled, sliced into 1/4 in slicesCooking spraysalt and pepperMeat Sauce.1 lb ground sirloin2 tbsp. olive oil1 onion chopped3 cloves chopped garlic1 red pepper1 (16 ounce) package sliced mushrooms2 tbsp. italian seasoning1 pkg chopped spinach1 can tomato sauce1 can stewed tomatoesCheese mixture.1 cup ricotta cheese2 eggsIngredients.1-1/2 cup shredded mozzarella cheese1/2 cup parmesan cheesePreheat oven to 425.Spray cookie sheet arrange eggplant and season with salt an pepper.Cook slices 5 minutes on each side.Lower oven temp to 375.Brown meat, onion and garlic in olive oil for 5 min.Add red pepper and mushrooms and cook 5 min.Add spinach, tomatoes and spices.and simmer for 5-10 minutes.Blend ricotta and eggs.Layer as in cooking instructions.
Layer meat mixture, eggplant slices, rittotta mixture, mozzarella and parmesan. Repeat.
Cover with foil and bake 375 for 1 hour.
Remove foil and bake another 5-10 minutes until cheese is brown.
Serving Size: makes 12 servings in a 9x13" pan
