Fantastically Fruity Rice Pudding

Ingredients
3 cups cooked short grain rice4 cups whole milk˝ cup sugar or stevia baking blend˝ tsp salt 2 eggs, beaten1 cup frozen raspberries1 tbsp vanilla
Directions
Combine rice, milk, sugar and salt in a pot and cook over medium heat until thick, about 15 to 20 minutes.
Stir in eggs and raspberries and cook 2 minutes more, stirring constantly.
Remove from heat and stir in vanilla.

Serving Size: Makes 8 cups, 16 1/2-cup servings
