Southwest Chicken and Black Bean Soup

1 tsp canola oil1 cup chopped onion2 tsp garlic2 tsp chili powder1 tsp paprika1 tsp cumin ground6 cups home made chicken broth1 cup stewed tomatoes1 green pepper chopped12 oz. boneless chicken breast cut in small pieces.2 cups canned black beansjuice of a limecilantro to garnish
Serves 4
Heat the oil in a soup pot and add onion, garlic, chili powder, paprika, and cumin. Cook until onion softens.
Add Chicken broth, tomatoes and green pepper and bring to a boil. Reduce heat to a gentle boil and add the chicken and beans. Cook stirring for about 8 minutes or until chicken is no longer pink inside.
Add the cilantro and lime juice before serving.
