Southwest Chicken and Black Bean Soup

Ingredients
1 tsp canola oil1 cup chopped onion2 tsp garlic2 tsp chili powder1 tsp paprika1 tsp cumin ground6 cups home made chicken broth1 cup stewed tomatoes1 green pepper chopped12 oz. boneless chicken breast cut in small pieces.2 cups canned black beansjuice of a limecilantro to garnish
Directions
Serves 4
Heat the oil in a soup pot and add onion, garlic, chili powder, paprika, and cumin. Cook until onion softens.
Add Chicken broth, tomatoes and green pepper and bring to a boil. Reduce heat to a gentle boil and add the chicken and beans. Cook stirring for about 8 minutes or until chicken is no longer pink inside.
Add the cilantro and lime juice before serving.

    Only 4 servings? There are 6 cups broth, two cups if beans, one cup of tomatoes and 12 ounces of chicken. That's at least 10 cups volume. Would be better to figure one cup servings. - 4/20/21
