Chicken Fiesta Soup with Quinoa

Ingredients
- One Chicken Breast (Boneless/Skinless)- 1 Large Tomato (Chopped)- 2 cups Skim Milk- 1 cup Red Bell Pepper (Chopped)- 1 can Whole Cream Corn - 2 Garlic Cloves- 2 tbsp White or Wheat Flour- 2 cups Chicken Stock- 1/4 Cup Quinoa - 3 tsp Hot Sauce - 1 tbsp Chili Powder
Directions
- On med. heat sauté garlic, peppers and chili powder for 2 minutes
- add in chicken stock and bring to a boil
- add chicken
- in a large mixing bowl, mix milk and flour until flour is no longer visible, then add to soup.
- add quinoa and let boil (5 minutes).
- add in tomatoes, corn and hot sauce.
- let cook for another 10 minutes.
