-3.5 cups grated zucchini-1 cup corn-1.5 cups grated carrot-1 cup finely chopped or grated onion-1.5 cups lite cheese (I used a mix of romano, lite cheddar and parmesan)-6 med eggs (lightly beaten)-0.5 cup skim milk-dash of salt & pepper to taste-2 cups wholemeal flour-spray of olive oil spray (to grease dish only)
- Preheat oven to 180 degrees.
-After preping and grating ingredients. Lightly beat eggs.
-Place all ingredients into large bown and mix together
- lightly grease 2x 20cm baking dishes with spray oil, pour mix into dishes and place in oven for approx 50 mins or until golden and knife comes out clean
