Kat's Beans & Greens

Ingredients
Coconut Oil, 3 tbsp Red onion 1.5 cup, chopped Fresh Oregano, 1 tspn Fresh Thyme, 1 tspn Fresh Rosemary, 1/2 tspn Sherry, dry, 1 fl. oz Cannellini Beans, white, 3.5 cup Swiss Chard, 6 cup, chopped Kale, 10 cup, chopped Vegetable Broth, 3/4 cup Smoked Paprika, 1/2 tsp Nutritional Yeast , 4 Tbspn Tomato, 1 large, diced Garlic, 2 tbsp *Salt to taste
Directions
In a large saucepan sweat onion, garlic, and fresh herbs in 2-3 tbsp coconut oil.

Add 1 oz cooking sherry and a bit of salt.
Cook for 1 min.

Fold in beans, stir until well incorporated.

Add 1/2 of the chopped greens, vegetable stock, 1/2 of the nutritional yeast, and smoked paprika--- cover with lid and steam on medium heat until greens have reduced in size and are tender.

Stir in the rest of your greens and then cover.

Cook until sauce reaches the consistency you prefer.

Serve with diced tomato and fresh garlic, with a sprinkle of nutritional yeast and cayenne pepper.
