Pumpkin Muffins with Flax Meal

Ingredients
1 whole organic egg1 organic egg white¼ cup brown sugar1/4 cup white sugar1 can (1-3/4 cups) mashed, plain pumpkin1 tsp vanilla extract2/3 cup nonfat milk1/4 cup unsweetened applesauce3/4 cup whole wheat flour1/2 cup white flour1/4 cup ground flax seed1 tsp. baking soda1 tsp. baking powder1/2 tsp. salt1 tsp. cinnamon1 tsp. pumpkin pie spice
Directions
1. Preheat oven to 400*F.
2. Spray 12 serving muffin pan with cooking spray.
3. Cream egg and sugar with electric mixer until thickened, about 3 minutes.
4. Stir in pumpkin, vanilla, milk, and applesauce until well-mixed.
5. Gently stir in flour, flax seed, baking soda, baking powder, salt, and spices until combined.
6. Do not over-mix.
7. Drop batter into prepared muffin pan, filling cups about 3/4 full.
8. Bake in pre-heated oven for 25-30 minutes, or until cake tester inserted in the middle of muffins comes out clean.
