Crunchy Caramel Chocolate Parfaits

Ingredients
1 Tbsp. Sugar-free fat-free chocolate instant pudding mix1/2 Tbsp. light chocolate syrup1/2 cup Cool Whip Free (thawed)1/4 cup fat-free cream cheese, room temperature2 Vitalicious VitaTops (any chocolate variety), thawed8 caramel-flavored mini rice cakes, lightly crushedOptional Toppings: Fat-Free Reddi-whip, additional rice cakes
Directions
In a medium bowl, vigorously stir pudding mix with 1/4 cup cold water until mostly smooth and slightly thickened. Mix in chocolate syrup. Add Cool Whip and cream cheese and thoroughly stir until mostly smooth. Cover and refrigerate for at least 20 minutes.

Break one VitaTop into small pieces and divide between two mid-sized glasses.

Divide half of hte pudding mixture between the glasses, about 3 tablespoons each. Divide crushed rice cakes between the glasses.

Break remaining VitaTop into small pieces, and divide between the glasses. Divide remaining pudding mixture between the glasses and enjoys!
