Quinoa Pilaf

Ingredients
1/4 C. Ancient Harvest Quinoa1/2 C. water1 t. olive oil1 T. celery, finely chopped1 T. onion, finely chopped1 T. carrot, finely chopped1/2 T. green pepper, finely chopped1/2 T. sweet red pepper, finely chopped1/4 t. oregano, or to taste
Directions
Combine 1/4 c Quinoa and 1/2 c water and bring to a boil. Boil 5 minutes, remove from heat, cover and let stand 10 minutes.
While Quinoa is sitting, heat olive oil in small skillet. Add all veggies and sauté until just tender.
Combine veggies and Quinoa and season with oregano.
