Matsaman Beef Curry

1 Pound of beef roast cut to stew size1-2 tbs of Matsaman Curry paste1 14oz can of Coconut cream1 Onion Large quarterd3 small potatoes quartered1 cup chopped carrot1 tbs of tamarind juice2 cans of water
Seperate the cream part of the coconut and set aside. Place the meat, thin part of the coconut milk, and 1 can of water in a stock pot and cook over high heat until boiling. Reduce to simmer about 30-40 minutes.
20 minutes into cooking the meat. In a non-stick skillet add curry paste and heat until you can smell curry. Add the cream part of the coconut milk and blend (about 10 minutes) add the blend to the meat mix well. Add potatoes, onions and carrots. Add salt and tamarind juice and simmer until potatoes are done. Serve over cooked rice (not in nutrition count)
