Creamy Mushroom Chicken Breast

Ingredients
2 T. Olive Oil2 cloves garlic crushed1 C. sliced mushrooms1 t. corse ground black pepperI small bottle white wine 7oz. Chardonnay works well1/2 C. Chicken Broth6 Butterflied Chicken breasts trimmed to 6 oz.each2 T.Mascarpone cheese
Directions
Saute mushrooms in oil until soft.Add garlic and cook for 2 mins. Add white wine, water and black pepper. Cover and keep on low while broiling butterflied chicken breasts until cooked through. Add Mascarpone cheese to broth and blend. Add chicken to broth, cover and simmer for 10 mins. Remove chicken, cover with foil. Boil broth until it slightly thickens and reduces. Poor over Chicken.
