quinoa asparagus minestrone

Ingredients
5 cups water1Tbsp vegetable broth seasoning10 oz frozen spinach6 stalks asparagus (about 1/2 bunch)1 can dark red kidney beans1 can white kidney (cannelli) beans2 cans petitie diced tomatoes4 carrots, chopped1 med onion (yellow or red)2 clove garlic1 Tbsp olive oil1/2 cup quinoa (dry) 2 tsp italian seasoning1 tsp crushed red pepper flakes1/2 tsp white pepper
Directions
saute onion, garlic and carrot in olive oil.
Add all ingreditents to pot, bring to boil and simmer for 30 minutes. If desired may add beans to last 10 minutes of cook time
