Real Simple Vegetarian Chili With Chocolate

Ingredients
1 tablespoon olive oil2 clove garlic, minced1 large onion, finely chopped1 green bell pepper, diced1 red bell pepper, diced2 16-ounce cans diced tomatoes2 15-ounce cans chickpeas, drained and rinsed2 15-ounce cans kidney beans, drained and rinsed5 cups vegetable broth2 teaspoons ground cumin2 teaspoons chili powder1 small can tomato paste1 teaspoon salt3 ounces bittersweet chocolate
Directions
* In a stockpot, over medium heat, cook the oil, garlic, onion, and green pepper until slightly softened, stirring occasionally, about 5 minutes.
*Add the tomatoes, chickpeas, kidney beans, vegetable broth, cumin, and salt. Bring to a boil over high heat.
*Reduce heat to low, cover, and simmer, stirring occasionally, until thickened, 1 to 1 1/2 hours.
*Before serving, stir in the chocolate until melted.


Serving Size: Makes about 8 two-cup servings.
