Omelet on Toast

Ingredients
2 slices 8 grain bread toasted1 pat of butter1 slice onion chopped fine2 eggsHormel Bacon Bits 1 tbspMozzarella Cheese 1 oz gratedMrs. Dash salt free seasoning - lite sprinklelemon pepper - lite sprinkleCajun powder - lite sprinkle
Directions
Heat a non stick frying pan, add butter and onions. Add seasoning. When lightly browned, add bacon bits and cheese. Add eggs either direct or scrambled in a bowl first. With a fork (care don't scratch the pan) mix all ingredients together and form into a rectangle. Let cook until just starting to brown and then turn.
While doing this toast the bread and place on a plate.
Cut the omelet in half and slide each half on the toast. You can eat it like an open fast sandwich and makes a quick easy breakfast.
Watching calories? Only eat once a week.

    I made this using pam butter spray (-9g fat and 80-cal), added green peppers, egg beaters (-9g fat and 80 cal) and pepper jack cheese slice (-1g fat and 10 cal). I also split it between 2 people using 3 slices of whitewheat bread. Cutting calories & fat considerably. Great Recipe. My kid loved it! - 7/1/08
