cajun breakfast cassarole

Ingredients
12 large eggs6 oz velveeta cheese1-1/2 cup of diced lean ham1/2 cup diced red onion2 4oz cans of mushroom pieces1 can of cajun stewed tomatos1 cup of great value fiesta blend cheese
Directions
Beat eggs and add all ingredients except grated cheese.
Spray a 9x13 pan with pam and pour in the mixture. Bake at 350° for about 1 hour or until knife inserted in center comes out clean. Sprinkle cheese on top. Let cool for 10 minutes and cut into 12 pieces.
