Ingredients
  • 3 whole wheat English muffins, split (6 halves)
  • 1/2 cup pizza sauce
  • Pizza toppings (choose any 3):
    • grated carrots
    • sliced mushrooms
    • chopped broccoli
    • pineapple chunks
    • chopped green or red peppers
    • sliced zuchini
  • 1/2 cup low fat mozzarella cheese, grated
Directions
1. Spread about one tablespoon sauce on each muffin half.

2. Arrange your favorite toppings on the "crust" in a single layer. Use at least three colors.

3. Sprinkle one tablespoon cheese on each pizza.

4. Place pizzas on a baking sheet and bake at 350° F for 10 minutes, or until cheese is melted.

Makes 6 pizzas.

    We've made these for years, they're yummy! Very versatile;put on whatever you have on hand. Also, we flatten our muffs with a rolling pin first...makes them bigger and can pile on the veggies. Very filling that way! - 12/26/07

    I'd like to suggesting using Arnold 100% whole wheat sandwich thins instead of bagels for fewer calories. It's a convenient snack or addition to soup or salad for lunch. - 6/29/09

    Yum! We use Flatout Lites - sundried tomoto is my fav - spray with Pam, bake them for about 7 minutes then top and cook til the chees bubbles! - 6/29/09

    I used pita halves, instead of English Muffins, and it worked much better! I made these for neighborhoof kids, so all of them got to choose which 3 colors ehy wanted to eat, and everyone loved it! Bravo!! - 7/11/08

    My hubby and I had this last night and it was wonderful! We used the whole wheat english muffins and whole wheat pita for the crust. The pita has a better "thin crust Pizza" taste than the english muffins. Tuesday night is pizza night and this will help make that day healthy! - 7/9/08
