Fish Piccata

2 tblsp all-purpose flour1/8 teaspoon pepper1/2 pound cod fillet2 tsp canola oil1/2 cup chicken broth1/2 tsp corn starch1 1/2 teaspoon water1 tbsp lemon juice1 1/2 Smart Balance2 tblsp capers drained
1. mix four and peppper in pie plate. Dredge the fish in flour mixture
2. Heat the oil in a large nonstick pan over medium heat. Ad fish and cook until brown, approx. 2 minutes on each side. Remove the fish to a plate and keep warm.
3. Increase the heat to high. Add the stock to the skillet and bring to a boil. Cook for 1 minute then stir in lemon juice and better.
%. Put the fish back into the skillet along with the capers to warm up and the sauce thicken a couple of minutes.
