Ramen noodles with beef

1 lb skirt steak or other lean steak, cut into thin strips2 packages ramen noodles, cooked, drained, without seasoning4 cups beef broth1-2 TBS soy saucechopped dry-roasted peanuts (about 1/2 cup total)2 cups fresh spinach1 cup chopped carrots1 tsp sesame oil1 TBS canola oilCilantro and lime for garnish if desired
In large wok or skillet, heat oils and add sliced beef, cooking to brown. Push meat aside, add carrots and sautee several minutes until beginning to get tender. Add broth and soy sauce, bring to a boil, reduce to simmer and cook until carrots are tender. Add spinach to wilt, stir in cooked noodles. Serve topped with a sprinkling of chopped peanuts, plus cilantro and a lime wedge if desired.
